“Handkaese” is a German regional sour milk cheese, a culinary specialty from the Harz Mountain to Frankfurt region (state of Hesse), Named after the way it is made, “by hand.” The Hand Cheese – or Harzer Cheese – has a distinct smell, slightly sour tastes and semi-hard texture. Delicious with applewein or apple cider.
